Nothing beats my mums mac ‘n’ cheese. I’ve been asking her for this recipe for a few weeks now but it’s one of those that she’s just stored in her mind for years, so she totally wings it and somehow it tastes the exact same every time!
So finally she wrote it all down which I’m so glad as I want to have this forever.
Susan Caplan’s mac ‘n’ cheese (feeds 4)
Heat large pan of salted water.
Melt 30g of butter in a large ovenproof saucepan over a low heat, then add 25g of flour. Turn up the heat a little. Stir constantly to get a smooth paste (known as the roux)
Very gradually add 500 mil of milk semi skimmed ( full fat for a richer sauce) stirring constantly or use a hand whisk.
Add 200g of grated Cheddar cheese, mature or medium whatever is preferable and stir to make a thickened sauce. Keep aside.
Add 300g (approx) macaroni to the boiling water and cook according to packet instructions.
When macaroni is cooked, drain and give a quick rinse with cold water to remove starch.
Mix the macaroni in with the sauce and gently heat throughout on the hob. Add salt and pepper to taste.
Remove from hob.
Add a mixture topping of grated Cheddar cheese and little grated parmesan if required to cover the ovenproof pan.
Place in a hot oven for about 15/20 mins under browned and sizzling.
